The summer heat is here!

Plunging into the water under that bright sun is in! Those tan lines enter trends once more, and sun block will definitely sell like hot cakes this season. I can already feel the sand under my feet and can't wait for that vacation along the shore.

Well summer doesn't have to be somewhere else than home. You can still enjoy with your kiddo in an inflated pool at home, or maybe a nice peaceful and reflective time in the tub. We need to freshen up every now and then; not just by bathing, but also by picking the best refreshments to serve our family. What else complements a nice summer break? Cold treats that every one wants! Quenching that thirst becomes a must, and so you must be ready with a recipe. Tired of the usual cold soda or juice? Let's try something else. The Banana-Pineapple Breeze.


Nothing beats fresh fruits and natural juice for a healthy cold refreshment.


Careful with the brain-freeze!


1 piece banana, ripe (latundan variety)

Juice of 1 calamansi

1 can (240 ml) Pineapple Juice

2-3 tbsp. sugar or syrup

2 cups crushed ice

Equipment: Blender


1. Peel banana.

2. Pour calamansi juice over banana and mash it. Set aside.

3. In a blender, pour in pineapple juice and sugar or syrup. Blend.

4. Add the banana and continue blending until smooth.

5. Add the crushed ice. Blend for few 20 seconds.

6. Serve in a glass and enjoy!

How to cook Japanese Tofu Steak

If your budget is not enough to take your family in a Japanese dining experience, you can now bring the Japanese taste on your very own dinner table. It wouldn't require classy porcelain of oriental design. It wouldn't require Japanese table setting. Just follow this recipe and your family will surely enjoy the tofu steak delight of Japan.

Fried Tofu
¼ kilo Tofu
½ cup flour
¼ tsp. salt
1 egg
½ cup water
1 cup Japanese bread crumbs
Cooking oil for frying

Ground Pork Topping
½ kilo ground pork
4-6 cloves garlic, minced
1 white onion, julienne strips
¼ c. butter
¼ cup Japanese soy sauce
1/8 cup oyster sauce
2 tbsp. sugar
1 tbsp. cornstarch dissolved in water
½ cup water
1 stalk onion leeks, cut in strips

1. Cut tofu in squares. Set aside.
2. To make the batter mixture, mix flour, egg, water, and salt in a mixing bowl. Set aside.
3. Prepare Japanese crumbs in a separate bowl.
4. Deep tofu one piece at a time in batter mixture, then, bread crumbs. Allow to rest for 3 minutes.
5. Fry breaded tofu in deep hot oil until golden brown. Drain excess oil.
6. In a separate frying pan, sauté in butter garlic, onion, pork until meat change its color.
7. Add soy sauce, oyster sauce, and sugar. Simmer for 3 minutes.
8. Dilute cornstarch into water. Stir in cornstarch solution to meat mixture. Add in ½ leeks and simmer until sauce thickens. Turn off heat.
9. Arrange fried tofu on a platter. Top the meat mixture on tofu. Garnish with the rest of the leeks.
10. Serve hot with rice.

Are your kids tired of the usual sandwich spread and ready-made snacks you find? The supermarket can never supply what a home-made snack will wholeheartedly provide. A slice of tasty is like a plain paper that would not hold interest on any kid as long as it remains plain.

Ready-made spreads become too common, too boring in the long run. They may like it one time or maybe a week or two, yet there will always be that day that they would say, "Mom, is there anything else than that?" When that time comes, most likely, you are one lost individual. Well, don't fret. Here's a different and delectable sandwich that your young loves will surely want over and over again! Take it from my friend, Dolly Cabalquinto.

This delicious sandwich is at the top of my kids’ snack list. It’s fun and easy to make. This recipe is good for one serving. - Dolly




2 slices of Tasty or American Bread


1-2 tsp. butter


1 tbsp. Strawberry jam


1-2 slice(s) Quick melt cheese or cheddar cheese




Oven toaster or Sandwich-maker




  1. On separate slices of bread, spread butter.
  2. Add and spread the strawberry jam on one slice of bread.
  3. Top the jam with slices of cheese.
  4. Cover the layer of cheese with the other slice of bread.
  5. Heat up the toaster or sandwich maker and pop in the sandwich.
  6. Toast bread until cheese has melted and the bread is slightly brown.
  7. Serve hot.

As easy as that! Your kids would definitely ask for your home-made snacks once more!

There is nothing more enjoyable than a home-made delectable plate of chocolate chip cookies. If you find the cookies in supermarkets too expensive for a day-to-day snack for your little ones, a home-made chocolate chip cookie is your best option.




If you find commercialized cookies too 'dry' for your taste, you would definitely choose the luxury of enjoying the soft bites of a home-made one. Baking your own chocolate chip cookies will not only give bonding moments for you and your loved ones, but will also help you enjoy a soft freshly-baked snack with them. One of my students, AJ Valera, shared her aunt Miles' recipe:




2 sticks Dairy Creme buttermilk


1/2 cup white sugar


1 1/2 cups brown sugar


2 eggs


2 1/2 tsp vanilla or almond extract


2 1/2 cup flour


3/4 tsp rock salt


1 tsp baking powder


1 tsp baking soda


1 1/2 bags Hershey's chocolate chips




1. Preheat oven at 175 C


2. Mix the wet ingredients in one bowl (butter, sugar, eggs and vanilla)


3. Mix flour, baking soda, baking powder and salt in another mixing bowl


4. When both sets of ingredients are mixed well, contents will be combined into one bowl


5. After mixing, pour the chocolate chips


6. Place golf-ball-size cookie doughs on the cookie sheet


7. Bake them for 10 minutes or until edges are light brown


8. Then leave them at the cookie sheet for a few more minutes


Good for 2 dozens of cookies

Marinara Laing Spaghetti

Marinara Laing Spaghetti

Who would say no to a plate of spaghetti in any feast? It's an all-time favorite especially by kids! My friend, Dolly Cabalquinto thought of a way to make kids love Laing (Gabi leaves), a Bicolano delicacy, by including it in a traditional spaghetti recipe. Here's how:


Laing Spaghetti:

1 tbsp. Margarine

½ cup onions, chopped

1 tbsp. garlic, minced

1 tsp. ginger, minced

3 (150 gms.) cans ready-to-eat laing (available in supermarkets)

½ cup all-purpose cream

½ tsp. salt

1 tsp. lemon juice

½ tsp. pepper flakes

300 gms. spaghetti noodles cooked according to package directions

½ cup Cheddar cheese, grated

Freshly ground black pepper, to taste


Marinara Toppings:

180 gms. Shrimps, shelled

180 gms. Mussels or Tahong, boiled and shelled

1 tbsp. garlic, minced

¼ cup shallots, chopped

½ tsp. salts

½ tsp. ground black pepper

2 tsps. calamansi juice

3 tbsps. Olive Oil



  1. In a pot, boil the mussels in water until you see that the shell has opened. Drain and remove mussel from its shell. Collect shelled mussels in a bowl. Set aside.
  2. Peel shrimps and set aside.
  3. In a medium pan, sauté shallots and garlic in olive oil. Add the shrimps and mussels to stir –fry. Mix calamansi juice, black pepper and salt. When shrimp has completely changed its color, turn off the heat.
  4. Set aside and keep seafood toppings warm.
  5. In the same pan, melt margarine and saute onions, garlic and ginger over medium heat.
  6. Add laing and let cook for a minute.
  7. Add all-purpose cream, salt, lemon juice and pepper.
  8. Cook for 2 minutes.
  9. Add pepper flakes.
  10. Upon serving, toss noodles with laing sauce and top with seafood.
  11. Sprinkle with grated cheddar cheese.

Makes 4 to 5 servings.

There you go! The Pinoy Spaghetti that the young-ones and not-so-young would definitely enjoy! Bon appetit!
